Ginger Beef Stir-Fry with Green Beans

It’s tough to beat the incredible medley of flavors and textures you get from a killer stir-fry. And let me tell you, this sesame-ginger beef recipe? It’s right up there with the best of ‘em. You’ve got that crisp snap from the green beans, paired perfectly with tender beef, all smothered in a sauce that’s like an umami explosion – sesame, ginger, and soy galore. But here’s the trick: serve it over rice, and you’ve got the perfect sauce-soaking canvas. It’s a game-changer!



 

Ingredients:
  • 2 pounds hanger steak, sliced against the grain into ¼-inch strips

  • Kosher salt and fresh ground pepper, to taste

  • 6 tablespoons cornstarch

  • 3 teaspoons canola oil, divided (2 tsp + 1 tsp)

  • 2 pounds green beans

  • 1 head of garlic, minced

  • 6-inch piece of ginger, grated

  • 1/2 cup soy sauce

  • 2 tablespoons rice vinegar

  • 6 tablespoons cane sugar

  • 4 green onions, chopped

  • 2 tablespoons sesame seeds

  • Kimchi, for serving

  • Jasmine rice, for serving

 

Instructions:
  1. In a mixing bowl, prepare the sauce by combining minced garlic, grated ginger, soy sauce, rice vinegar, and cane sugar. Set this flavorful sauce aside.

  2. Begin by slicing the hanger steak against the grain into ¼-inch strips. Pat the beef strips dry with paper towels and season them with cornstarch, kosher salt, and fresh ground pepper. Toss to coat the beef evenly with the seasonings.

  3. In a large skillet or wok, heat 1 teaspoon of canola oil over medium-high heat. Add the green beans and stir-fry for 1 minute. Then, add 2 tablespoons of water and cover the skillet with a lid to steam the green beans for an additional 1 minute. Once done, transfer the green beans to a plate and discard any excess water.

  4. Return the skillet to high heat and add the remaining 2 teaspoons of canola oil. When the oil is almost smoking, add the seasoned beef strips. Stir-fry the beef until it’s almost cooked through, which typically takes 2 to 3 minutes.

  5. Reduce the heat to medium and swiftly add the garlic, ginger, soy sauce, vinegar, and sugar to the skillet, making sure to coat the beef quickly with this savory sauce.

  6. Reintroduce the cooked green beans to the skillet and mix them with the beef and sauce.

  7. Finish the dish by topping it with chopped green onions and sesame seeds.

  8. Serve your delectable Ginger Beef Stir-Fry immediately, accompanied by jasmine rice and kimchi for a delightful meal.
